    Can ya really go blind if ya play with yer meat too much?

    This one is short and sweet. Notice all the Christmasy colors in this batch. Southwest blend. Fresh ground jalapenos all lathered up on the meat after brine and then into the smoker.

    Should be done in 7 hours or so..

        Forgot to mention the brine...2 gt. soy sauce, 2 qt. water, 2tbs coarse black pepper, 2 tbs. garlic powder, 2 tbs. onion powder, 1/3 c TQ, 1/3 c brown sugar. Can sub apple juice or red wine for some of the water. This will brine up to 15# meat. 36 hrs., drain and hang or rack. Sometimes sprinkle additional garlic, or cbp, or lather it up with fresh ground jalapeno or habanero for the heat freaks.

            Jerky round 3

            Finally finished with this weeks smokin...40 bags jerky, 19 bags snak stix and 14 1# rolls summer sausage and trail bologna. No new pics. You'll just have to look at the old ones.
