Wondering if anyone has a tried and true good recipe for this. My sister wants me to can her some because her family goes through it crazy fast. They don't care for real hot/spicy foods and all the kids eat it.
First I want to find a great recipe and then work on the canning techniques later.
I have found 1 online that looks interesting -
Back Bean and Corn Salsa
8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped
1 1/2 cups green peppers
1 cup jalapeno pepper, chopped
1 Poblano pepper, chopped
6 garlic cloves, minced
1 teaspoon cumin
1 teaspoon black pepper
1/8 cup canning salt
1/3 cup vinegar
1 (15 ounce) tomato sauce
1 (12 ounce) tomato paste
2 (15 ounce) black beans, drained and rinsed
3-4 cups frozen corn or canned or fresh
2 T of lemon juice
2 T of sugar

This is the recipe I used for a bean and corn salsa. This is a recipe that I winged so I can't call it tried and true but me and the wife have been enjoying it. Use any color bean you want but be sure to used canned beans as they have already been processed. You'll also need to pressure can for 30 minutes @ 10lbs as adding the other items to the tomatoes reduces the acidity.

Via the miracle of email..... Probably very similar to most others, but Julie always makes it, so it's called Julie's salsa :thumb:
Julie's Black Bean And Corn Salsa
1 can corn
1 can black beans
1 can chickpeas
4 plum tomatoes seeded & diced
1 red or white onion diced
1 or 2 peppers - any color - seeded & diced
1 jalapeno - seeded & diced
1/3 bunch cilantro chopped
Dressing
1/2 cup vegetable oil
1/2 cup vinegar
1 packet dry italian dressing mix
1 lime juiced
3 T minced garlic
1 T Italian seasoning

thanks! I figured I would end up pressure canning it because of the corn but that recipe I got online she says she has water bathed hers for years with no problems. I have the pressure cooker so I will go that direction.
Fishawn - does Julie can hers, or just make it fresh all the time?

Some great recipes!!
I always make it fresh and use:
black beans
diced fresh tomatoes
jalapeno fine dice
cayenne thin slivers
yellow and white corn
garlic finely chopped
mango (adds a nice sweet to the spice)
red onion
cilantro
lime juice
toasted cumin seeds then crush in mortar and pestle
S&P to taste
I also like to take flour or corn (I prefer the flour) cut it 8 triangles, deep fry and add a sprinkle of Mad Hunky when they come outta the oil. YUMMY!

Just threw this together gang and it rocks! Absolutely awesome!
