  • Help with brunswick stew

    OK ppl I need a little help with making brunswick stew with beef and chicken to give it a nice flavor im will to smoke the meat,and would like to add a little bbq sauce to give it a little kick, so let me know what you got and send it to me

      This was a favorite of my Dad's. (who was a Texan)

      He used to make it in a Dutch Oven when we camped and started in on it about as soon as we got the tent pitched. Leaving me to finish setting up our campsite.

      He made it THICK and it always had lima's or butter beans in it along with Okra. The Okra is a thickener it seems. Potatoes were cut up in small chunks to go in and cans of corn were added too. But it had a heavy tomato base.

      The pork was pulled and stirred through and he always wanted one of the meats to be rabbit or squirrel. It was usually minced up fine for the flavor.
      But it could have had beef or whatever was on hand I think. But never fish.

      Dad often called it HOBO stew and I think one of the reasons for our going camping was just so he could make it and eat it all week end. It was always good. I remember him putting red pepper in it too.

      I understand that this stew varies in it's contents depending on whether you are in the north or south.
