  • Canadian Bacon in the works

    Just put some on for the weeks rest last night... little over 3lbs... three tablespoons of tenderquick, three of sugar in the raw, one of powdered sugar, one of black pepper, and some dill... let you know how it turns out...

          Dill eh? Interesting.... You gonna "pea" it? Rolled in corn meal... good stuff. Adds a nice crust upon frying.

              it's been hard not to eat it... taking it to cook up in IOWA this weekend... the fry test was awesome... I'm chomping at the bit to fix the whole thing... very good from what I can tell... we'll have pics up soon of the little fishing trip... gonna pick up steve (walking dude) on the way too... camping out in the hills of IA for the weekend... leaving thursday and coming home monday... bluegill, here I come...

                  I did it after... but would it matter? Perhaps you'd get better adhesion before come to think of it. The time I pea'd it it tended to flake off.

                        I'll let ya know... but the fry test was awesome... you can pick out the dill... it's great... might not recognize it if you didn't know it was in there... and more pepper on this one than in the past... I like it... we'll let steve be the judge and post some pics after this weekend...

                          got pics of it cooking... ask walking dude how it turned out... heard something about throwing it in the pond... no really... but he did lose some off his chair when the wind took it in the water...
