Been wanting to do this for some time now .smoked a batch of venison jerky in the Smoke vault on my dehydrator trays .The idea was to smoke em for about 3 -4 hrs with apple chips and then finish off in the dehydrator.much more convenient for a high time pressure life.
So here we go .thawed out seven pounds of venison chunks and sliced for jerky
I used nesco's origanal jerky mix for todays jerky
Put the spices and cure in the revo
Added the meat and two cups of water and began the marination
I love this thing .its really the cats meow when it comes to maranating any thing from jerky to steaks ,pork chops and chicken
I still let it sit overnight for the cure time .then onto the trays and into the vault.
Now I know these trays are going to smoke stain up something terrible but I'll buy another set for regular dehydrating and keep these for in the smoker." or so I thought"
Now the idea was to keep the temp down low ,so I barley used any gas at all and got my apple chips smoking with a few chunks of coal just like i do for smoking sausage
Temps were just perfect
smoked em like that for about 2.5 hrs.when I noticed the trays were not quite holding up thiere end of the deal
they were starting to deform just a little but enough for me to scrap the rest of the smoke and just move the meat to the deydrater.
It actually turned out pretty flippin good .could have used a little more smokebut not bad at all
BUT,for the answer to Ross's question the other day.I probably would not recomend smokin jerky on your dehydrator trays
Even though I kept the temps down below 150 it was still to hot.I will do this again but only with pure cold smoke.
