416Just a few pics of the start of a new smoking season weather looks like it going to get better ,pulled out some boned out deer hind pieces and a few small scaps for the dog

Just winging it I've lost my files on computer when it crashed . Tender Quick ,brown sugar , garlic cloves ,crushed allspice . then wrap in bacon and smoke. I wish I had a stuffing horn so I could net them ,I have some stainless steel sheet here to try and straiten out afriend of mine has a sheet metal roller to try and make one . They look so nice in the netting like little lunch meat hams

Yeah they do...but you can still "form" them pretty well with a good strong commercial grade plastic wrap during the cure. Tighten that momma down good...it retains shape OK.

Sorry no pictures of finished product kids had camera at my parents as they just came home from wintering in Arizona. It turned out well and didnt last to long , a few friends over for a beer or two (cases) there it was gone!

Canadian bacon next .

Nice...my son's can't make that drive to Canada....but they sure could devour that venison, if ya was dwn the road a bit!
