  • Chopped Pork Loin Onion and Green Chile Enchiladas

    Kept a piece off the end of the pork loin i smoked. I new if i took it all, it would be gone.

    Always crave something spicy after thangiving.So made some enchiladas.

    Chopped up the smoked loin with fresh onion and a sharp cheddar.

    Pressed some homemade corn tortillas. (Bobs Red Mill - Masa Harina)

    Toasted them in a dry pan, then dipped them in the warmed up sauce.

    Filled with the meat, fresh onions, and cheese. Topped off with the remaining cheese and sauce.

    Baked 20 min. on 350.

    With a side of leftover sweet potatoes that had cumin, Ancho chili powder and a little green enchilada sauce added to them.

        Very nice. Love enchiladas and yours look fantastic. Made my mouth water.

        Never used the green sauce, but tried it a mexican resto recently. Have some PP in the freezer saved for a run at these with green sauce. Can't wait.

        What I find interesting is your sweet potato. That's definitely a different take. Love them just the way they are, but this, sounds really good. Thanks for the ideas.

              Lookin' mighty tasty!
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.

                Wow. I love enchiladas. for using left-overs. It's getting harder and harder for me to convince my kids that left-overs are still good.

                        Thanks everybody for the points and praise.

                        CA, .. I made the press after seeing the $ of them online. Made from a scrap piece of 1 1/2" glue/lam countertop.

                        Got the hinges and wood from the rebuild it center here in Portland for 5$. The handle was from my smokin wood pile, a piece of cherry.
