  • Just planning my Christmas dinner

    This year I want to change my usual side dishes and desserts from my Christmas menu. I will still be making the Rib Roast with Yorkshire Pudding and I have been hearing this commercial on the radio from a decent restaurant about their dessert called; "Tiramisu" I have looked at a bunch of recipes and saved this one I found online and am just asking if anyone has made this, any thoughts or suggestions?

    The Best Tiramisu Recipe.

    YIELD:Approx 12 Servings Ingredients:

    * 6 egg yolks

    * 1 1/4 cups white sugar

    * 1 1/4 cups mascarpone cheese

    * 1 3/4 cups heavy whipping cream

    * 2 (3 ounce) packages lady fingers (approx 24 lady fingers total)

    * 1/3 cup Kahlua

    Topping extras

    * 1 teaspoon unsweetened cocoa powder (dust)

    * 1 (1 ounce) square semi sweet chocolate (shaved)

    Procedure


    ***To start I chill the bowl I will be whipping the cream in***

    * Combine egg yolks and sugar in the top of a double boiler. I do this over boiling water.

    * Reduce heat to low.

    * Cook for about 10 minutes and don't go anywhere! Stir it constantly.

    * Remove the mixture from heat and whip in the yolks until its thick.

    * Add the mascarpone to the whipped yolks.

    * Beat until combined.

    * Pull your chilled bowl out of fridge and whip the cream until the stiff peaks are formed.

    * Gently fold into yolk mixture and set aside.

    * Split the lady fingers in half.

    * Line the bottom and sides of your serving bowl with the lady fingers.

    * Brush the lady fingers with the kahlua (see substitutions).

    * Spoon half of the cream filling over the lady fingers.

    * Now you are going to layer - using lady fingers, kahlua and filling.

    * Keep going till you run out of lady fingers.

    * The top layer of filling is finished off with cocoa or chocolate curls. (Or both!)

    Enough Lady fingers to make the best tiramisu recipe.


    Ingredients

    * 5 egg whites

    * 4 egg yolks

    * 2/3 cup sugar

    * 1 dash vanilla

    * 1/2 teaspoon baking powder

    * 1 cup all-purpose flour

    Lady Fingers Recipe Procedure

    * Separate eggs into two separate bowls.

    * Beat egg whites on high speed until foamy.

    * Add two tablespoons of the 2/3 cup of sugar to the egg whites. Continue to beat until stiff peaks form, and set aside.

    * In a separate bowl, add vanilla and remainder of the sugar to the egg yolks and beat.

    * Set it aside.

    * Sift together the flour and baking powder.

    * Fold half of the egg whites into the yolks. Do it real gently.

    * Fold the flour mixture into the yolks.

    * Fold the rest of the egg whites into the yolks.

    * Put the batter into a pastry bag. ( I use a a ziploc bag with the corner snipped off.)

    * Pipe the batter onto a greased cookie sheet.

    NOTE: Traditionally they are shaped like two lady sized fingers. But they are going to be layered and covered. It really doesn't matter.

    * Bake for about 6 minutes. Stay close because all you want is the edges to turn brown.

    That is an authentic recipe for the most part...I have also seen it done using espresso rather than Kaluha, but I think I would stick to your original recipe if I was making it...good luck!

      I have also seen some recipes which use a substitute for the somewhat expensive Mascarpone cheese which is.

      16 ounces cream cheese
      1/3 cup sour cream
      1/4 cup heavy whipping cream


      But I think I'll stick with the real stuff for my Christmas dinner.

        Sounds like a good recipe. I have made it many times. I do use espresso instead of the kahlua though. One thing to keep in mind is that when you buy the ladyfingers you want to get the hard ones, not the soft ones. If you can only find the soft ones you need to put them in the oven and dry them out a bit first. Otherwise they become a soggy mess. Good luck and take pictures!

            I was thinking using the espresso and was going to make me own lady fingers. Thanks for the tip on drying them a bit more, makes sense. Anytime Poppy
