Well when it comes time to rack it, I'd surely fill a shot glass and have a sample. Wait half way or so thru the siphon to do it so you don't get any sediment in it. Should give you a pretty good idea of what it will taste like in the end.

If you do what Vark is talking about drewan, take the straw and sterilize it in bleach water. Rinse it off in fresh. THEN, insert it into your brew and place a finger over the end of the tube to form a vacuum. Then pull the sample out and drain it into a small glass (like a shot glass)
When you do this the straw is what is known as a "Wine Thief"
Cleanliness is everything here..........you don't want to infect your brew.
