  • First time cheese smoker

    Ok my choices are Hickory, maple and cherry....going to be using the A-Mazing smoker...What would you use...oh the cheeses are Pepper jack, mozzarella, and gouda, might pick up something else if reccomended

    Cheese benefits from a lighter smoke. But, that said a strong cheese could stand up to hickory... I suggest apple. If you wanna break it out...hit the gouda with hickory.

      Well ok I have some apple but not the fine ground... Not sure how that would work... And these are going on at the same time

            Yeah...no need to go long on cheese. Well, other than waiting at least a week...better a couple...before rendering an opinion. It MUST sit a while...

              I suggest using pecan or apple & leave the softer cheeses in for the least time & likewise leave the hardier cheeses in for the longest time. Works for me.
