    Smoking 2 slabs of ribs right now, KC style, 15.4 pounds all together. Didn't feel like trimming them, got to much going on today. The only trimming I did was the membrane, that is a requirement anytime ribs are done.Smoker cranking right along at 225 for 1 hour before they went in. Using lump, cherry and mesquite on these. They marinaded over night in a Worcestershire sauce base marinade, rubbed them off with my own garlic based rub and topped it off with Montral Steaks mix, all on top of a good base of mustard. Anyhow, this is the first pic of the ribs as they went in;


    I'll update again as they go to foil.

    Its a great day here, sunny, light southerly breeze and 82 degrees.

    Done screwed up folks. Went to foil them and didn't have any foil and had to run and buy some, so no picture. just as well, I have learned my grand son has the camera for some Earth Day after school project.

      I bet they still will be good.. I normally dont foil here at the house... If I cook for a event I will..

            Yes, everyday is rib day, butt day, chuckie day, fattie day, Dutchs' Wicked Bean Day and on and on.

            So this is an update. Grandson returned the camera right as we started slicing the first slab. Second slab still was finishing up. We were to hungry to let them rest.

                  Thank you gentlemen. Been planning for this day all year. Then Sunday when they gave the weather forecast we said Wednesday was the day. Almost go derailed from the get go today. Rear drive shaft went out on the highway and during the repair the truck almost rolled over me. Then when it came time to get the ribs into foil I was out and had to go buy more. On the way to the store we came across around 20 cows out. By the time we helped get them put away and to the store and back here the temp had dropped significantly and I thought the ribs were lost. I cleaned the temp probe and all was well. Foiled em, back on for a couple of hours, out of the foil for an hour then some sauce and well, you saw the rest.

                      Hey Jeanie, it was one of our days. Living this type of life sure gives ya challenges. No offense, but my grandpa when dyas like this happenned said it would put hair on your chest. I know thats not true for you but, they sure are trying days for sure. Gonna have another one today. Evidentally over night the pressure tank bursted on the well. Gotta run to tractor supply and get a new one. Gonna be real nice, the other day we re-graded down by the well and with our overe night storm its a mud pit down there now.

                      Glad ya liked the ribs. Did Dutchs' beans and twice baked potatoes too. But as I said, we were in too big of a hurry to eat to really take any pictures, let alone let the ribs rest.

                      I am gonna get the ribs up on my blog after I replace the pressure tank.

                              And wow - those were some huge racks of ribs. Not a chance I'll ever see racks like that over here.
                              Glad to see everything worked out okay in the end, we all have days like that on occasion :-)
