Got me some cheese on sale to try out the new amazen smoker.... got me some Gouda, pepper jack and chedder..I will be using the perfect blend pellets from amazen, also I figured iI would use my 40" masterbuilt for this adventure:bounce:

Din't sample it? GOOD! I have never been happy with a fresh smoke on any cheese. 2-3 weeks later tho...mmmm :{)

Doug it is my drip tray, used it to block the direct heat rise from the amazen smoker

Granted it's probably somewhat warmer where you live but I use the same MES and the same smoker with no heat issues :noidea: Course I'm smokin dust and not pellets :thumb:
