Very, very chili night last weekend at the farm. I tried some veggie beef soup in a 10" shallow DO...pretty much the same as my beef stew, but no flour and some tomato juice added.
I was having trouble with my charcoal. I think it may have gotten wet and I couldn't get it going and get the DO back to a boil after adding the veggies. So, we moved the DO over to the side in the fire pit on some pit coals. This worked great especially since I got cold if I moved away from the fire...now I didn't have to.
Veggie Beef Soup (would serve 4-5)
2 lbs stew meat
3 cans beef broth
1 can tomato juice
3 potatoes peeled and diced
2 carrots sliced
1 can green beans
1 onion chopped
Salt and pepper to taste
Any other veggies you want!
I browned the meat and then added the broth and let it simmer until meat was tender. Then add the potatoes, onion and carrots and let simmer until veggies are almost tender and add green beans and tomato juice, salt and pepper to taste. I let it all simmer together for about 45 minutes.
When we were ready to eat, I put some ham and cheese sandwiches together, grabbed the DO lid, flipped it over on some pit coals and wiped it off. Once it was hot, I grilled the sandwiches. Turned out pretty well!
