Tell them youngsters to invert their numerator and denominator next time they they reduce the overhead on that deer critter! Their bang for buck...er doe will be phenomenal!

This is the recipe I use for pepperoni snack sticks. It's something I found years ago and added a tweak or 2.
10 lbs lean ground venison or beef
10 to 15 % pork back fat
2 tsp Prague Powder (I weigh mine .04 oz/lb of lean meat)
4 Tbs garlic powder
1 Tbs ground fennel seed
2 Tbs paprika
3 Tbs (or more) cayenne pepper
1/4 C dextrose
1/4 C corn syrup solids
Binder of your choice. I use B&P's "Special Meat Binder." Takes less than 2 tsp to do its job.
1 Cup ice water
I've never added cheese to my snack sticks before, but had a bunch of pepper jack already diced. So I went ahead and threw it in.

Yes it is. Being on an extremely low fat/high protein diet, it only makes sense to eat venison bacon. I love it anyway.
