I cooked dinner for a friend of the family today. She recently was diagnosed with breast cancer and just had surgery (Only 35 years old!) While she is in recovery mode we thought some BBQ might help things along.
But since the smokers were going...I made plenty.
Started with a few slabs of St Louis spares, rubbed and ready for some smoke.

And a pile of chicken. Seasoned well under the skin, then lightly dusted with rub on the outside of the skin.

And of course a nice pile of abts

This is the ribs about to get foiled.

My foiling mix. Honey, brown sugar, a splash of cider vinegar, and some amaretto.

Had to throw in a fattie too. Homemade Spicy Italian sausage, pepperoni, fresh mozzerella, a sprinkle of dried basil

Ribs out of the foil and back on the drum

Chicken, abts and fattie in the offset smoker. Burning lump and cherry chunks today.

Normally I refrain from saucing my ribs, but since I am cooking for someone else I went for a nice sticky glaze. It was a mix of BBQ sauce, honey and a splash of cider vinegar.

Fattie is done.

Also brushed a little sauce on the chicken at the end.

Along with the ribs, chicken, abts, and fattie...we also made them mac & cheese, green beans, corn bread, and salad
