this really isnt "smoked fish" like we are most used to, ie brined and smoked. walleye is not a good fish for that type of smoking, is way to lean a fish. but just wanted to create something which would allow me to use some of these fine fish and add a bit of smoke to them. first off, the victims....
in a pan with melted butter to let them bathe in while in smoker, also onions,lemon slices,fresh dill from garden,pepper,salt. thats all the walleye needs, too fine a fish to try and make better with excessive seasonings!!!
from the smoker, as far as temp i think is debatable. depends how much smoke you want to your fish. the big thing is do not over cook these fine fillets. just barely flaking at thickest part, flesh should be opaque.
and a plated pic, walleye, with the butter flavor and the smoke... is a great way to serve these. i got the idea from an oven fried recipie i had seen a long time ago.
