I think that a good tater soup is one of the most enjoyabe foods for Wintertime. You can add anything too it and it is always a hit.
Smoked meat,corn, shrimp,oysters,fish or just some cheddar cheese!
I always start with some good olive oil and a little butter. Caramelize some onion & garlic. Add some chopped carrots and Yukon gold potatoes. Celery if ya like it. Then cover with a good stock and a few bay leaves. Simmer til potatoes are tender.
This time it was a handfull of puled pork from the freezer that made the plunge. Throw in the meat and bring the mixture to a light boil. Stirred in some cold half and half mixed to a thin slurry with some potato starch to thiken it! Add some fresh ground pepper and some salt to taste.
Serve with some crusty bread and Hot Sauce.
Just plain ol good food made better with some smoky goodness.
