Ok guy's here we go it is our venison marsala. We used tenderloin on this one but have used backstrap and roast for this dish and it is always great. Slice the meat and pound with a meat hammer (I guess that is what it is called) unitl about 1/4 inch thick. Season the meat with Toney's dredge in flour. Fry in olive oil and butter in cast iron skillet. Brown both sides and remove to a platter. Add marsala and scrap the bits up from the bottom of pan then add chicken broth untill about 1/2 inch deep in skillet. Then add the meat back to the skillet trun heat down to low cover and let simmer for 10 min basting several times. Remove meat back to platter. Trun to med. high heat and add chicken broth reduce liquid add 1tbs butter to finish. Pour over venison and serve.

Dang... way to go with a great venison dish!!! i know my goal was to post a new wild game recipe per week, but this thing called work and ice fishing has me all tied up... but it threads like this which have kept the wild game recipes coming thru every week. nice job and on the too do list for sure... i will go with Rich's thinking though and use some shrooms and onions...
