Decided to throw some boudin we made recently into a backstrap and see what happens. Turned out purdy dern good. Layed the strap open and stuffed a link's worth of boudin inside. Seasoned, dusted, rolled and wrapped with bacon. Fixed up some ABT's real quick and threw it all in at 225 with some hickory. Pulled it off at 160 IT and let her sit for 15 min. or so. Mrs. Rednose threw together some smothered red taters and some green beans to hang out with the vennie. Here's a few pics....
