  • Big Egg Baby Back & Dino Bones

    Hey, All
    Finally took out the Egg for a worthy spin.

    Very, very happy with the performance, and results. The Egg held temperature like a finely tuned instrument...I was pleasantly surprised at this.

    I made some Beef Short Ribs...that were super fatty, and required quite a bit of trimming, some baby backs, and a couple of bratwursts...

    Didn't have time to rub the night before, so they got their first rub two hours before they hit smoke...

    Here are a few shots:

    All rubbed up


    All in the egg (the beef ribs were put in 1.5 hours before the baby backs)

    The baby backs were *delicious* - on a par with the best I've ever made...super tasty and super duper tender.

      Great looking grub... Beef shorties are great.. Try and get them uncut.. Wow!!!! And no need to trim fat..

      Nice Rock on the Mrs's Hand too..


      And I see sides??? Wha-dup with that??

        Uh, Yeah...We got engaged...she's gonna be Mrs Fat Head Carl...in june.

        We made baked beans and Heidi's Mom's Mac & Cheese...simple sides, as to not take away from the meat.

        I made a tasty KC style sauce that turned out pretty well (the top popped off my celery salt...so I had to scoop some out, so I'll never know how much celery salt actually went in).

        As far as them Dino bones....they were the fattiest I've ever encountered. then the silverskin was under the fat...the only way to rub spices on the meat (opposed to the fat) was to trim the dickens out of it. I've made these before that weren't anywhere near as fatty. Anyways, the effort was *worth* it.
