Best I have had is coating them in a beer batter/fish type breading and deep fat frying.

Dependin' on how many sets ya got...Duck gumbo....just a Looziana boyz way of thinkin' .....
...or marinate a few hours in some zesty italian, a bit of garlic, worsy and soy; then put a few slices of jap 'tween the chi-chi's and bacon wrap ... indirect grill 'til bacon is somewhat crispy.Rudy

However, if I had them, i would marinate them in a combo of orange juice, italian dressing and teriayki sauce for 12-24, add any other ingrediaents you might think of. Then, on the grill especially if still skin on.
If not, make some duck fingers. I have never done fingers with duck but I bet it would be damn good.
