  • Can You Smoke Cheese On A Kettle? Hell Yes You Can!

    After yesterdays' cheese smoke on the Bandera, I had 3 more lbs of cheese left and wondered if I could smoke cheese on my Kettle. Yes I can. 2 lbs of cheddar and 1 lb of pepperjack. I used the same set-up in my Kettle that I use on all my indirect smokes. I'm using plum sawdust for this one as I thought the pellets would be too much heat. Started this at 09:45 with an air temp of 58.5 degrees. One row should give me 4 hrs of smoke...........I hope


    AMNPS lit and the smoke is happening. Lid ready to go on.

    So good so far. Time will tell on this one, but I do believe it's going to work.

        Heck...you could use Alton's cardboard box with that Amazin' I think... Altho the binders/glues in a box worry me... even at low heat.

          with the amazin smoker no prob... i dont think you will get 4 hours from the one leg of wood dust though... they dont raise the temps in the smoker hardly at all. great for cheese, or bacon and hams too.

                I kinda thought the same thing with the pellets too, but 1 leg did last 4 hrs.

                    Apparently I'm not packing it in as tight.
                    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.

                          The dust only lasted 2 hrs. so I did a quick addition and will let it finish. Probably should have filled the one row with more dust from the onset, but no biggy.

                              All finished up & now to vac pac. A bit more color change, but I think that's due to the smaller space of the Kettle which means the cheese took on more smoke. A 3 wk nap in the fridge and it's time to give it the taste test. I be lovin' this A-MAZE-N smokin' device Thanks for following along.
