A while back Tim posed a braided sweetbread on facebook that really tripped my trigger and occationally I will take it out and experiment with it. Really loved that bread and the adaptability of using it.
ANYway I wanted to make a Euro/American meat and fruit thing for Superbowl snacks. really tired of the chili, salty, dip and veggie, wing thing. So I again took out the bread braid thang ...
I wanted the bread less sweet so reduced the sugar from 1/3 to 1/4 cup and increased the butter to a full stick which was perfect for my tastes.
I will repost the teaked recipe.
Dough:
4 cups flour
2-1/4 teaspoons active dry yeast (1 package)
1 cup room temperature milk
1 stick softened butter
1/4 cup granulated white sugar
1 teaspoon kosher salt
Mix dry ingredients together first then add butter and work together like rice.
Lastly add yeast and milk in the middle of the bowl and allow the yeast to wake up in the milk before stirring into the whole mass. Knead and set aside covered in a warm place until needed.
Cream Cheese Filling
1 pack of cream cheese
2 tablespoons sugar
1/2 teaspoon vanilla extract
First sliced the figs about 10 oz.
Nuked them for a few minutes in ˝ cup of white wine, a sprinkle of lemon juice and about 1 tablespoon of sugar, then mashed them with a fork
While that was cooling I microwaved a pound of bacon and let that cool
Peeled and sliced 4 apples, added a sprinkle of lemon and a tablespoon of sugar, nuked and drained
Peeled sliced and chopped a 1/-1/2 cups pineapple, added a tablespoon of sugar, and 2 tablespoons corn starch and pulverized in the food chopper, nuked and drained
Split the dough into 3 pieces
Rolled it out into a rectangle and made diagonal sliced 1/3 of the way through
Spread figs on one (no cream on this one but it would be good - I forgot)
Then two layers of hot capicolla ham and 1 thin layer of provolone cheese
Then folded in the little wings
Then spread the cream cheese mixture on two of them
Layered the pineapple, Black forest ham and a thin layer of munster cheese on one
Creamcheese, apple and bacon on the other …
And baked at 375˚F for about 20 to 25 minutes until golden brown…
All baked and ready to cool
Sliced open the fig and capicolla. Outstanding combination! I didn’t put the cream cheese on it because frankly I forgot but I think it was probably better I didn’t. Might have been too sweet, but it was good raw. I tried all the combinations of meat and cheese before I baked them into the bread.
Just tried the apple and bacon - OH MY GOD was that good! Perfect balance of the creamy cheese, tart apples and crispy bacon. If you try anything you have to try this!
