  • Wake and prep - Super Bowl Cook

    Got motivated this a.m. to put into action the Super Bowl eats, got my mind right and got to work @ 6:30 a.m.

    Gonna have both kettles out fored with what I have on hand, some lump, some blue bag, some apple,& some oak.

    knocked out a herbed paste for the lamb ribs(lemon juice, rosemary, olive oil, garlic, tumeric, majoram, black pepper, kosher salt, old bay), :






    rubbed some bb's:



    got some sausage to stuff some mushrooms with:



    waiting for the wife to get home with the kosher salt so i can brine some wings, and gotta do up some bleu cheese dressing still.
    Just because you welded some shit together doesnt make it a WSM.

      Looks like you are mighty motivated today. I had my alarm set for 5:45 to get rolling on my bacon but that didn't happen. They went in the smoker at 8 instead. Oh well it will just be a later night then I wanted. Have fun watching the game. Sounds like you have a nice spread going.

        lol, my teams are out, just an excuse to do a few different meats.

        I was lucky to be up, I almost went back to bed, but I knew I needed those couple of hours for flavor.(ideally I would have done some last night).
        Just because you welded some shit together doesnt make it a WSM.

                sorry, smoked a little and had a few beers once my buddy came over, then the game started, etc.. all good. snapped the pics though.

                left the WSM in the garage, the (2) 22.5" were up to the task.



                Italian sausage stuffed mushrooms

                mix:
                - mild italian sausage
                - bread crumbs
                - eggs
                - pickappa sauce
                - l & p worstershire
                - mozzerlla
                - parmesan
                - red wine
                - garlic
                - minced onion



                stuffed caps:

                nice bite, sausage mix was poppin:

                bb's off the grill, sauced and I had to toss em in some foil on the counter to wait for a few other things to get done:

                lamb ribs, somehow missed a pic of a bone, or inside, nice ring, juicy as hell:



                wings were brined in a basic kosher salt/sugar brine, Arthur Bryants rub. smoke roasted and crisped up over the flame. Texas Pete and some butter as the wing sauce. Homemade bue cheese dressing, with a popping blue cheese from Cali.:

                Pork ribs were fantastic, starting to prefer them at a higher temp, tender with some tug. Wings were good, glad I did a short brine, blue cheese dressing was funky and as good as any I have had, matched with the wings well. Mushroom caps were a hit as well.
