  • Iced Lake Trout hit some Maple via the Amazen smoker w/pics

    the victims, actually only did up the big one this batch...




    filleted and left skin on, also i cut each fillet into 5 pieces.




    the plan is to smoke over maple using Todds Amazen smoker. i have brined the fish for 2 days using my traditional brine. and then a fresh water soak for 6 hours. let set til the pellicle formed. i used brown sugar like i usually do on 1 fillet...


    on the other i am going to use maple syrup from last springs harvest. kinda crappy pic...


    side by side on a sheet pan...


    i got 2 bags more in the freezer so i got some more to play with. thks for cking my pics!

            those are seriously chunky looking fish.

            Sounds great. You know I'm pretty sure that cooked. smoked and vacpacked they'd be fine for a week in the post, I'm willing to risk it

                          Nice fish. I remember eating a lot of smoked trout when I was a kid. Killer. One of these days I will catch and smoke some myself. Never had Lake Trout though. What did you catch them on and how big were they? That one looks really nice.

                            no secrets here... i thought i had it posted but couldnt find it... went back to a 2009 post and found it. this one is passed on down from me grandpa...

                            smoked fish brine

                            2 3/4 cups pickling salt
                            10 qts cold water-use good water
                            1 cup brown sugar
                            2 tbls garlic salt

                            soak avg sized pieces 24 hrs, soak in fresh water 1 hour

                            big thick pieces of fish, may require more time and smaller less. once out of brine set on a rack with a fan blowing across fish til outside of fish dry, a coating will form on it called the "pellicle", is now ready for smoker. i also like to rub some brown sugar on the meat

                            jig with big musky tube jigs, they like white it seems... and have tip ups for our second line. or if there is 2 of us, will put 3 tip ups around the flipup with only one hole in the center. i think the big tube jig action draws them in. on the tip ups we use sucker ot whatever is locally available minnows...

                            all nice fish, 6-12 pounds being about the size they run. everynow and then get a bigger one, we have snapped some lines in the past but always figured maybe a big pike done it, but after seeing that monster laker maybe not...
