  • Dutch Oven Peanut Butter Chicken in the Backyard

    I found this recipe on a DO blog and thought it was usual and so I had to try it. Their recipe came from Real Simple magazine and was:

    8 boneless skinless chicken thighs
    2 14.5 oz. cans Petite Cut Diced Tomatoes with Jalapenos, undrained
    1/2 cup creamy peanut butter
    Fresh cilantro, chopped, for garnish

    Since there are only 2 of us, I did:

    2 bone in chicken breast
    1 10oz can of diced tomatoes with green chilies undrained
    1/4 cup creamy Jiff

    You HAVE to use Jiff peanut butter...even though the label doesn't say it, it's made right here in Lexington about 10 minutes from where I live. You can smell roasting peanuts from a mile away.

    Anyway, this was a good dish, but I think I over did the peanut butter for the smaller can of tomatoes. I think a tablespoon or 2 would have been plenty.

    I mixed the tomatoes and peanut butter together and spread over the chicken that I had seasoned with salt & pepper. Then I baked it in my 10" shallow DO with 8 coals on the bottom and 22 on the lid and served it with egg noodles and penne (using the last of what I had of each) and crusty bread. It took right at an hour for baking and I did not need any more coals.





    Getting my coals going.



    At this point I was thinking it didn't look very good but I was too far gone to turn around now. Andy even asked if I had a back up plan for dinner.

        Hmmm I love the spicy peanut sauce in some Thai dishes, is this anything close to that? I might just have to give it a whirl.

              I use to love peanut butter chicken at the china buffet but I just got sick of it for some reason. I bet that stuff is awesome.

                Yes, I did like it but the peanut butter was a little too much. Next time I will use the regular size can of tomatoes & chilies (maybe 2 cans) and a little less peanut butter.

                        It seems like something out of South East Asia.

                        I've always seen peanut butter as an ingredient in deserts or confections
                        of some form.

                        My favorite for a PBJ is still Peter Pan.

                        I used to date a girl who ran a Health Food Store and they made peanut butter along with other nut butters there. Their peanut butter was only
                        roasted peanuts ground into the butter.......and quit different than the store bought. Often it was mixed with some honey.

                        Most of the stores sell the "natural" peanut butter which has a lot of oil
                        standing on top and you have to stir it up before using.

                        She used to explain to me how the store bought was largely mixed with
                        "shortening-like" ingredients like Crisco. (just as an example to visualize it with)

                        So anyway that's what I can add to the peanut butter discussion.

                          Another delectable DO dish from the TUWB.. . Once again, looks awesome Becky. From the looks of your ingredients, seems like you cut everything in thirds except the PB. Definitely on my to-do list!!! Thanks for the post.

Im gonna 459 this recipe and send off to some folks I just meet that are big DO cookers, they actually have met Nocal Dave, what a small world eh? met these folks camping a few weeks back.                               Interesting dish. Strange, but sounds like it could be good.
                              Maybe next time throwing in a little Asian influence or African spices would help balance out the peanut butter in the dish
                              Though tomatoes would work with African don't think they would so well with Asian.
