I found this recipe on a DO blog and thought it was usual and so I had to try it. Their recipe came from Real Simple magazine and was:
8 boneless skinless chicken thighs
2 14.5 oz. cans Petite Cut Diced Tomatoes with Jalapenos, undrained
1/2 cup creamy peanut butter
Fresh cilantro, chopped, for garnish
Since there are only 2 of us, I did:
2 bone in chicken breast
1 10oz can of diced tomatoes with green chilies undrained
1/4 cup creamy Jiff
You HAVE to use Jiff peanut butter...even though the label doesn't say it, it's made right here in Lexington about 10 minutes from where I live. You can smell roasting peanuts from a mile away.
Anyway, this was a good dish, but I think I over did the peanut butter for the smaller can of tomatoes. I think a tablespoon or 2 would have been plenty.
I mixed the tomatoes and peanut butter together and spread over the chicken that I had seasoned with salt & pepper. Then I baked it in my 10" shallow DO with 8 coals on the bottom and 22 on the lid and served it with egg noodles and penne (using the last of what I had of each) and crusty bread. It took right at an hour for baking and I did not need any more coals.
Getting my coals going.
At this point I was thinking it didn't look very good but I was too far gone to turn around now. Andy even asked if I had a back up plan for dinner.
