First time I tried this chicken casserole and it was darn tasty! I have done this before but always used a can of cream of something but this time did not
The recipe:
8 oz. broad egg noodles
1/2 cup (1 stick) butter
8 oz. fresh mushrooms, sliced
1/3 cup flour
2 cups chicken broth
1 cup milk
salt and pepper, to taste
1/3 cup freshly grated Parmesan cheese
2 cups cooked chicken, cut in cubes
2 Tblsp chopped parsley
Lightly oil or spray dutch oven. Cook noodles as directed on package. Melt butter in dutch oven over a full compliment of coals. Add mushrooms and cook until lightly browned. Stir in flour and cook for several minutes. Stir in milk, broth, salt and pepper; whisk sauce constantly until thickened. Add noodles, chicken and parsley; stir until well combined. Sprinkle with Parmesan cheese. Bake at 350 degrees for 20-30 minutes or until casserole is bubbling and cheese has browned. Serves 4-5.
For baking I used 8 coals on the bottom and 13 on top. I didn't get too many pics of the process because well...it was nice out last night and we hung out in the back yard and had a few
This time I cheated and bought one of those roasted chickens from the deli. Slam me if you must.

Dumped in the chicken, parsley, noodles, S&P, stirred it all together and then added the cheese.
Done
Served with iceberg lettuce.
This recipe is a keeper but I think more for fall and winter...it's some good comfort food! I think next time a little less noddles, too.
Oh, and the moon...it wasn't officially full last night but it sure was pretty!
