  • Easy and Pretty Quick Chicken Casserole and the Full Moon

    First time I tried this chicken casserole and it was darn tasty! I have done this before but always used a can of cream of something but this time did not

    The recipe:
    8 oz. broad egg noodles
    1/2 cup (1 stick) butter
    8 oz. fresh mushrooms, sliced
    1/3 cup flour
    2 cups chicken broth
    1 cup milk
    salt and pepper, to taste
    1/3 cup freshly grated Parmesan cheese
    2 cups cooked chicken, cut in cubes
    2 Tblsp chopped parsley

    Lightly oil or spray dutch oven. Cook noodles as directed on package. Melt butter in dutch oven over a full compliment of coals. Add mushrooms and cook until lightly browned. Stir in flour and cook for several minutes. Stir in milk, broth, salt and pepper; whisk sauce constantly until thickened. Add noodles, chicken and parsley; stir until well combined. Sprinkle with Parmesan cheese. Bake at 350 degrees for 20-30 minutes or until casserole is bubbling and cheese has browned. Serves 4-5.

    For baking I used 8 coals on the bottom and 13 on top. I didn't get too many pics of the process because well...it was nice out last night and we hung out in the back yard and had a few

    This time I cheated and bought one of those roasted chickens from the deli. Slam me if you must.

    Milk added after making the roux and waiting for it to thicken



    Dumped in the chicken, parsley, noodles, S&P, stirred it all together and then added the cheese.



    Done





    Served with iceberg lettuce.



    This recipe is a keeper but I think more for fall and winter...it's some good comfort food! I think next time a little less noddles, too.

    Oh, and the moon...it wasn't officially full last night but it sure was pretty!

    Wow! That looks really good. I've been pretty much using my D.O. for beans. Now I can try something new. And great shot of the moon.

                With food like that, I'd be full too. Damn girl, your on a roll, Really nice. Wish I had a big hill to climb so I could get close ups of the moon like that. really nice pics too.

                              just another "normal" post by Becky... first off on a DO, second is a from scratch recipe, third is the great pics that make your mouth water, fourth is she shares the recipe... almost forgot, fifth it looks damn good!!!

                              dangit Mags, dont you ever stop posting!!! i have gotten more recipes and ideas from this girl. and heck yeah this needs for all them reasons above!
