Hi, names Troy. I'm a member of realtree.com forums and...a smoking ace over there by the name of Snipe, pointed me here.
I've been smoking for exactly one year now. Was a total newb when I started. I've smoked dozens of pork spare ribs, lots of Boston butts and pork shoulders, tons of chicken quarters, salmon, 4 turkeys and a couple cheapo chuck roasts/london broils for the heck of it. Have yet to be disapointed.
My go to rub is a Tennessee rub.
However, since brining my first Turkey last thanksgiving, I now prefer brining. I brine all pork now and Turkey. Love it!
I also cut and cure all my own hardwoods from my property. Mainly hickory, maples, oak, and black walnut so far. But Hickory and maple are my favorite choices.
I just keep learning and having fun!
