  • Pullin Brisket Froze vs Fresh

    I been noticin a trend in my briskets, the ones I been buyin ahead a time an freezin seem ta pull easier then the fresh ones. Anybody else notice this?

    Guess I have not noticed, but it would stand to reason that might happen. Freezing does break up some of the cellular structure of the meat.

    Maybe BBally has some insight?

      Freezing seperates the protien fiber strands. That is why you can not refreeze fish and have it taste normal. Same with beef and pork. Chicken not so much as the fiber stand has less water in it.

          Leave it to me to go aginst the grain. I belive that fresh, never frozen meat makes for a better finished product. My comp scores tend to follow this also.

                The OP was only asking about the ease of pulling the meat, frozen as opposed to fresh.

                      So for your finished product ,you don't pull? I don't always, but often do the the point. I wasn't the one that brought TASTE into it.

                        Never pulled a flat. Did a point once, but now it's burnt ends, man! That's the ticket!
