I was watching GoodEats on the Food Chanel and Alton Brown was making jerky. He used pleated air-filters from a furnace. Put the strips of meat in the pleats and then stacked the filters and used a elastic strap to hold them to a box fan. No extra heat was added.

I am a big fan of Alton. But sometimes I think some of his ideas are for viewing entertainment than really working. Being a sheetmetal worker and installing 1000's of furnaces I know pleated filters add static pressure, adding multiple filter adds a lot of static pressure. And the a blade type fan in a typical box fan can not generate much static pressure at all.

Would I try it? Sure! If you already have a fan buy a few filters and give it a try.

          Here is the show online.

          And the jerky recipe.
