Tried this last year for the Holidays, Now I have to make it all the time lol.
Pumpkin cheesecake pie
1 8oz pk of softened cream cheese
2 cups pumpkin fresh or canned ( mashed )
1 cup sugar
1/4 tsp salt
1 egg + 2 yolks, slightly beaten
1 cup half and half, can sub heavy cream if needed
1/4 cup melted butter
1 tsp valilla extract
1/2 tsp ground cinnamon
1/4 tsp ground ginger
2 shallow pie pans or 1 deep dish pan, enough dough to do either
set the dough into pan or pans and set back into the fridge for an hour to set. Use foil to cover the dough and fill with dried beans and set into a pre heated oven of 350* and bake for 10 min. remove the beans and foil and bake ~ another 10 min or until the crust is dried out and starts to color. In a large bowl mix the cream cheese and pumpkin until combined add sugar and salt and beat until combined add the egg mix, half and half, butter and mix until combined add the rest of the ingredents and beat until combined. pour into warm pie shell and bake at 350* for 50 min or until center is set. cut and top with whipped cream.
