Hello to all, I would first say that I have been to many sites and this is the best by far for info and technical advise. I have been trained in the Culinary Arts from my mother who is a retired Executive Chef. I have been cooking since the age of 13 (now 50). I worked in my mother’s restaurants until the age of 20 but the burn out factor made me change carriers.

I still cook every day for family and friends and it is still my passion but just don’t want to do it because I have too. For my 50th my kids gave me a GC Duo with SFB. I have never smoked before and am looking forward to a new experience.

I have in the short time on your site learned very valuable information and cannot wait to start. I also have the great fortune to work next store the Back Yard Bash (BBQ supply store) and having Paul Kirk as a local.

I am an east coast transplant to Midwest so smoking is not something I am used to. Sorry about the long intro, thanks in advance for all the info I will use.

                      Paul G
