Fire it up 05-11-2012, 03:24 AM Here's a great thread on lobster tails from a top chef forum, it's like this site for smoker (top notch) but an all around Chef forum. I like the 4th or so down posted mention of smoked butter poached lobster tail. http://forums.chef2chef.net/viewtopic.php?f=27&t=544104&postsPager.offset=0 Here's a Red Lobster version I found INGREDIENTS: 1 teaspoon salt 1 teaspoon paprika 1/8 teaspoon white pepper 1/8 teaspoon garlic powder 1/2 cup olive oil 1 tablespoon lemon juice 2 rock lobster tails (10-ounce size), thawed DIRECTIONS: Split rock tails lengthwise with a large knife. Mix seasoning with oil and lemon juice. Brush meat side of tail with marinade. Pre-heat grill and place rock tails meat side down and grill 5-6 minutes until well scored. Turn over lobster and cook another 6 minutes, brushing often with remaining marinade. Lobster is done when it is opaque and firm to the touch. Serve with drawn butter and fresh lemon, or for an interesting twist, roasted garlic can be added to butter. Ever do smoked garlic instead of roasted in the oven? Bet that would be amazing with some grilled lobster :drooling: Richtee 05-11-2012, 06:03 AM That is a good site, the C2C. I have a membership there I think... sigh..too busy, to many forums LOL... Fishawn 05-11-2012, 09:00 AM Bbally has a thread on lobster cooking here somewhere i think. Fourthwind 05-11-2012, 09:24 AM I smoke them instead of boiling them now. Take a few cloves of garlic and crush them into a cube of butter and put the two over very low heat until the garlic is infused into the butter. Split the tails and take them out of the shell. Put into a zip lock bag with enough of the butter to coat and a tablespoon of EVOO. I add a bunch of my rub and a bit of Ms Dash seasoning, and then mix it all up in the bag, and let sit for about an hour. I put them on a piece of foil with the left over butter and rub mix from the bag. Smoke at 225° until done. About 30 to 40 minutes. Family and friends love the stuff. nickelmore 05-11-2012, 09:31 AM I smoke them instead of boiling them now. Yep, or your can just smoke them plain and dip in butter as usual. I was messing around one day and did that. Absolutely the best way to cook lobster according to Mrs. BIGGLOPEZ 05-11-2012, 10:47 AM Thanks folks, appreciate the fast response and the better half really wants lobster... It was considered cruel and inhumane treatment. They actually were that plentiful, but I won't complain, we can still get them on sale for about $4.99 or less most of the time.:nana2: Bearcarver 05-13-2012, 06:47 AM You know Bear...back in the days of indentured servants here in New England, they actually passed a law stating that it was illegal to make your servants eat lobster more than three times a week.
