    Critterhunter has a sweet mix for sausage i had heard......He sent me some ......Going to do a 5 pound batch tomorrow.......



    9 pound butt too much even considering the bone usually aboot a pound....I was hackin away and made some steaks........

    Just made a simple rub(was outta mad hunky) from a bunch me garden dehydrated stuff.....and warmed up webber gas grill for a quick sear(aboot 2 minutes a side with lid open)












    Smoked a sweet butt last week and used me brothers west carolina mop...Mop has the butt flavor in it with smoke etc........15 minutes a side at 350 degree in oven foiled....Amazing how that light smoke flavor will transfer etc....









    Grinding and mixing/adding the critterhunter dry mix on rest butt on standard coarse grind.....I will hand mix again after a nite in fridge and then fine grind the butt for sausage......





    Butt steaks were like butter.......2 minutes seared a side and 15 minutes a side in the mop foiled at 350 degree........let her rest 20-30 minutes while me corn steaming.......




    LOOKING FORWARD TO SOME CRITTERHUNTER GREEN ONION IN NEAR FUTURE.......

    Dint use any utensils on this gig..........Couple folk did show up though......

              Lovin those butt steaks, specially the melt like butter description
              Bet those sausages are gonna be great too. And the green onions you're using must be home grown I would imagine
