Why cant I just can my recipe? really what are the odds of food poisoning, pretty low right? I dont like the ball salsa recipe it sucks lol

Gator should never be canned.....
NO EXPERT HERE, but I think it has to do with the PH of the salsa? ..... I've canned some that use lemon juice for the PH (SMOKEFREAK) and it was really good.

Hey Pandy, just cut loose wif some cash and pick up a pressure canner. Opens all kinds of possibilities Check yard sales. You can get replacement parts for some pretty old canners.
My favorite thing to can is fresh Albacore, , ,a little olive oil a couple a cloves of whole garlic a jalapeno, best sandwhich you'll ever eat.JT
