    Good read, thought this was particularly interesting...

    A report this week by veteran food journalist Andrew Schneider estimated that between "11 to 35 percent of all packaged and sliced ham, beef, chicken, fish, pizza toppings and other deli products are enhanced, restructured or molded using the meat glue," but the industry says that ingredients are actually used in a "very, very, very" small fraction of beef and pork products.

    I know for certain I have had filets that used meat glue because you could tell it wasn't one solid piece of meat but 3 or 4 pieces formed together.

        it's actually a well balanced article.

        Although I'd quibble with the statement that it has to be declared as an ingredient. It doesn't, it comes under the natural products ruling. As substance that naturally occurs in meat.

        Also the statement that most of it is used at the restaurant end of the business.
        Absolute bollocks - it's primarily used to produce bone free conveniently shaped processed meats on a truly industrial scale.
