Mesquite or Hickory both work great. For jerky though, I prefer the mesquite myself.Don

I always use hickory, but I like hickory on dern near anything. Not a big fan of mesquite.Lang 84 Deluxe (sold it, broke my heart)

Oak, maple, cherry, apple, alder, pecan. All good choices. Also not a fan of mesquite, and not a huge fan of hickory on jerky but sometimes I'll mix it in with other stuff.Mike
