No pics yet of this version yet, but I made this over the weekend too.
Take a few cans of chunk or ring pineapple and soak in a bowl of coconut rum.
Prepare the following.
1 tbsp yellow curry
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp cayenne
1/4 tsp cardamom
2 pinches sea salt
Coat the pineapple with the powder mix spreading evenly. Place pineapple on a pan and smoke for an hour at high heat with cherry wood.
Devour.
I made a non-smoked version of this the weekend before on skewers with Caribbean Jerked chicken and Hawaiian sweet and sour pork chunks.
