My neighbor, a couple friends, and I were craving a little smoked cheese. One friend wanted some smoked baby swiss, so I made a deal with him to grind a 30 inch tree stump for 10# of smoked cheese. He owns a tree trimming co. Heck of a deal. So I ended up doing 2# of cojack for me, 6# mozzarella for another friend and 18# of baby swiss for me, my neighbor, and payment for the stump grinding. I did it all in one load for about 3 hrs with oak, hickory and pecan pellets in my homegrown pellet tray. It was about 88* outside and 70* in my smoker with about 5# of ice on a tray above the pellet tray.
