  • Cedar Plank Grilled Salmon with Spice Rub

    In the spirit of eating a bit healthier for a while and trying to drop a few lbs, we decided to do a cedar plank grilled salmon for dinner tonight.

    Picked up a 3 lb filet of Atlantic Salmon from the upscale grocery store:


    Cut it into 4 pieces, rubbed it with the following combo. After grilling it, it's gonna get a touch of honey on top:
    1 TBS Brown Sugar
    1 tsp salt
    2 tsp ancho chili powder
    1 tsp cumin
    1/2 tsp cracked black pepper


    Cedar planks soaking:


    Gonna serve with a recipe my wife got out of food network magazine. Tex mex salad, consisting of corn, black beans, cilantro, and a lime and red wine vinegarette dressing. Here's the recipe:

    Whisk 2 tablespoons whole-grain mustard, 1 tablespoon lime juice, 1 teaspoon red wine vinegar, 3 tablespoons olive oil, and salt; add 1/4 cup chopped cilantro. Grill 4 ears corn; cut off the kernels and toss with 1 can drained black beans, 1 diced red bell pepper, 4 sliced radishes and 3 chopped scallions. Toss with the dressing; season with salt and pepper.

    Also gonna be serving with some pecan and garlic whole grain rice.

      Yep. I like the looks, and sounds of that meal. Even as much as I am spoiled on salmon in this state I never get tired of it when it is done on the grill/smoker.

                  The wood gives it a hint of smoke, and ensures it stays nice and moist. Soaking the wood more/less steams the fish while it's cooking on the hot grill. Highly suggest this method. Also suggest the recipe. It was my first time using it and it had a nice blend of spice and sweet with the honey.
