    Not the animal...the plant. :)

    The lambsquarter is coming up thick around my farm this spring...



    I gather the young tender plants...




    I sort and wash them...




    Gathered some wild onions...






    Fried some of my pepper bacon..




    Sauteed the wild onion in the bacon drippings and a bit of butter..




    Added my lambsquarter and cooked til tender, then topped with the crispy bacon...




    The lambsquarter with a hunka cured smoked pork...

    I've had dandelion greens, but never those. Got 3 tractors setup with cultivators ta keep them out of the tobacco....they take over any crop!
    Guess I'll give it a shot this weekend...the family'll think I've totally lost it LOL!!

            Great looking weeds..(right?)lol. Only thing around here close to that is dandelion greens, which are very good. But I wouldn't eat, too many dogs around here adding their own flavor to the mix. That chunk of meat looks delicious.

                        crazy, them weeds grow in my garden.... hmmm dunno if i try eatin them but now ya got me thinking, why plant spinach!!!

                            WOW! I have been rather absent from the forum to have missed this one!

                            We used to eat lambsquarter and dandelion greens a couple times a year in the spring...I'll give my dad the credit for knowing they could be eaten, and making them tasty, too....although, he could have used a few cooking tips from Jeanne...those look AWESOME!
