  • Creamy Cucumbers

    Here is an EXCELLENT side dish for the weekend.
    You make this once and you'll be hooked.

    Creamy Cucumbers

    Ingredients:
    5 regular sized Cucumbers
    1 Diced Yellow Onion
    1 Cup Hellman’s Mayonaise
    1/3 Cup Sugar
    1 Cup White Vinegar
    1 TSP. Yellow Mustard

    Preparation:
    Wash and dry Cucumbers. Cut off ends and toss.
    Drag fork down the sides of the Cukes to “score”.

    Cut Cukes in Food Processor with a 4 mm blade.
    Layer Cukes in a 13x9 Pyrex pan. Lightly salt each layer.
    Cover with Saran Wrap and let sit in Fridge overnight.

    Drain in A.M. & rinse in colander with cold water.
    Mix the Mayo, Vinegar (you may also substitue a tad of Balsamic Vinegar),
    Sugar, Mustard, and Diced Onion. Stir and mix very well.
    Then SLOWLY add the cukes to the blend. Let sit for a day and enjoy!

    The Hunkys around our end of town used sour cream, sliced the onions in half then into thin strands. No mustard that I recall... try that out!

    As I'm not a mayo fan, I prolly won't try yours, but it sounds about good!

      Actually...from an old paperback cookbook called "Treasured Hungarian Recipes" Circa 1958- here is their version.

      Uborkasalata (Cucumber Salad)
      2 large cukes
      1t Kosher salt
      .25t green pepper chopped fine
      .5t sugar
      1T vinegar
      1T water
      1 small onion cut in thin slices and broken up
      .25t paprika
      Heaping tablespoon sour cream

      Salt thin sliced cukes, set aside for an hour and press dry
      mix in the rest of the ingredients, and allow to sit 6-24 hours chilled.
      Serve with a dollop of sour cream over the top well chilled.

                OK. But what's to lose? $1.50 worth of cukes and a bit of stuff ya already got?

                Let it sit a day before you eat and add the sour crean just before serving.

                  Actually my wife makes this kinda stuff. Myself...I cant stand the smell of raw cukes. I only stomach it cause Im a sucker for a good hot dill...

                    Wow $150 clams for two cukes? I think I'm going to try a combination of the two recipes. Sounds good.

                            My wife makes this. It's one of our summertime favorites. Try substituting 1/2 cup of honey for the sugar.

                              This is the version I grew up on. Man, I miss some of this stuff. Last year the rabbits got the cukes. I've got everything short of nukes guarding the garden this year. Can't wait. Mom used to smack us and ban us from the kitchen if we got into these before they were ready. Lol.

                              Peel and thinly slice five 6" cukes (Approx.) and 1 medium onion (leave in rings). Put in glass bowl and salt everything evenly. Refridgerate over night.

                              Rinse thoroughly in a collander. While that is draining, mix:

                              1 cup half & half
                              6 Tblsp. sugar
                              3 Tblsp. cider vinegar
                              1/2 tsp. garlic powder
                              1/2 cup Miracle Whip

                              Add the cukes and onions to mixture. Refridgerate for at least 24 hours.
