Well when I am on the run around town and dont have time to cook dinner I love to go to Chipotle Mexican Grill and just love their Braised Carnitas (pulled pork) burritos.
So I had some left over smoked pulled pork so I thought I would give it a shot.
First I made some fresh salsas because that is what makes Chipotle so good if you ask me!!
First is the tomato salsa with fresh maters our of the garden.
In this salsa I have tomato, onion, jalapeno, salt, pepper, garlic, and cilantro.
Used the food processor to chop things up as it is much easier than chopping it all by hand. Here it is pre-mixed.
And all mixed up...oh this stuff is soo soo gooooood!!
Then on to the fresh corn salsa..
Took 7 ears fresh corn and boiled and cut off the cob... to it I added salt. pepper, onion, jalapeno, garlic, and cilantro.
Prior to mixing...
And all mixed up...this is just as good if not better if you ask me!!
Now on to the pulled pork..
Took some of the left over water from the corn (about 2 cups) and to it I added one onion, 7 adobo chilies in sauce, and 1/2 stick of butter.
Then I added about 3 cups of pulled pork and let it simmer away. Here it is about 5 minutes in.
Then after about 40 minutes here is what we have.
Oh man this was some good stuff!! the smokey adobo chilies went so well with the pulled pork...
made some fresh guac and plated up the taco..
