  • White Miso and Sake Salmon

    This dish was made famous by a Japanese Chef Nobu Matsuhisa. And was done with Black Cod.



    I have used this recipe on Black Cod grilled. But it turned out fantastic with super fresh never frozen smoked Salmon!

    1/4 cup Sake

    1/4 cup Mirin

    4 tbsp white miso paste

    2 tbsp Sugar

    Mix together and marinate fish overnight.

    Smoked @ 150 with Alder for 2.5 hours

    Lots of Umami!
