  • pulled chuck enchilada casserole

    i made a rub of ancho chile powder,white pepper,cumin,garlic,onion,cilantro,& a dash of sage,
    took the chuckie to 205 over skeet then pulled for enchilada casserole.
    in the pit w/ ribs

    sliced before pulling.

    pulled chuck over the 1st layer of tortillas

    then add another layer of tortillas(warm oiled corn),enchilada sauce,top w/ cheese & onion & melt the cheese. then Ta Da-w/ all the fixin'z.


    move this under beef if needed
    brink vertical charcoal(the carp)
    18" old smokey charcoal grill/smoker
    cast iron Hibachi
    22" Kettle w/ "Smoke-EZ" styled riser extension
    & rotisserator
    12x7 wells cargo vending trailer(mods in progress)
    stuffer,slicer & more carp than i can fit in it...
    Marshall amps & various awesome guitars,drums,P.A.,etc.recording studio.....
