  • sturgeon smoke

    Went on vacation a few weeks ago and did pretty well on a variety of fish.I'm smoking the sturgeon today.Brined in salt,brown sugar,garlic and some cajun spices.It's drying some now will go in the smoker in an hour or so.

    Guess I'm not that familiar with sturgeon. Sure looks like a meaty type fish. Be looking for the finish sir!

      yup,they have lots of meat on them.These are shovelnose sturgeon I caught on the Missouri river.I'm hoping they turn out great,it's my first try at them.

            well,here's the finished pic.I smoked them hide down until they were approx 145 then flipped them over to drain some of the grease.They smell and look great will know in a couple days how they taste.

              Great Post, and thanks for the report on these!

              Can't wait to hear how they taste, because Sturgeon are protected in Pennsy.
              I always wondered how tasty they were.

                  meat hunter,you can be at this fishin spot in 12 hrs.fish a couple days and be back before the boss finds out you really are'nt sick.The limit on this kinda sturgeon is 5 a day and you can't help but catch them.Four of us limited out 2 days in a row.And we were fishin cats at the time.

                          Well,I tried my sturgeon today.I have come to the conclusion that it is the worlds greatest smoked fish.Excellant texture,just the right amount of moisture,nice flaky layers,and NO bones.I have a chance to go back for more in Sept.and I might just do that.

                              I'm born and raised in Sturgeon Falls, Ontario Canada, and the town was once a world leader in cavier by some locals great grand parents here (population today about 6000), species is protected and has not been able to be even recreational fished in my life time... I have been fortunate to fish for Sturgeon in the Lower Fraser river of British Columbia Canada
                              That looks AWESOME!! Gald to know that is tasted great, I just may have to try it if I ever get to fish for Sturgeon again :)
