  • New Braunsfels what?

    Man, sorry for posting so much for a new guy to a forum. I know how these things are, some of you guys have been here for a long time and the last thing people like is someone who posts too much. I just have so many questions. I want to learn this stuff.

    Someone asked me if my smoker was a Hondo or a Black Diamond, and I honestly don't know. Some of you old timers, do you know? Google is giving me conflicting answers....




    Also, wondering if I should mod it. Seems to me, experience in smoking meat is everything if you want a good result. I don't wanna fight myself any more than I have to if the mods I attached are a smart move. Trying to eliminate my own problems here heh.

    Hey, no sweat! Post away. I personally have no working knowledge of NB smokers, but Im pretty sure somebody will be along shortly who can enlighten ya. Crack a cold one and give it a few....

      What? where would you ever get that idea? man this is a place where you share what you got (victories and defeats), take what you need and enjoy the rest.

      i have very limited knowledge of the NB offsets and after glancing at the mod sheet it all seems reasonable. the only thing i would do different is the thermometer. i think most of us are using thermometer made by tru-temp with good results

        I completely agree, the more posts the better for the most part.
        Long as each one doesn't involve a Mouse In Place and the fact you had scrambled eggs for Breakfast (though I do love me some scrambled eggs)

        People say all the time they are sorry for another repetitive thread of common items like pulled pork, brisket, fatties but truth be told no matter how many times I see a new members smoker, a pulled pork thread or even a brisket thread it is always a little new and a little different and worth drooling over especially if the brisket thread contains burnt ends

        Keep the posts coming it's what keeps this the best BBQ site on the net!

          take a look at phil's Chargriller mods. although its is a different brand and model, many of his mod's translate well from offset to offset

            it's a black diamond. it's discontinued now but it's basically the same as a brinkmann smoke-n-pit.
            brink vertical charcoal(the carp)
            18" old smokey charcoal grill/smoker

              Fairly similar to the sheet you posted with the addition of tuning plates which help even out the end to end temp.

                I had one of these waay back, was my first smoker, made in Texas and built a heck of alot better than brinkmans smokers, heavy steel. Wish I knew how to use it then like I do now because I always oversmoked everything and never turned out good Q, was before the forums and all the help. I gave it to a friend and its still kickin, he doesnt use it but its still alive. Got it at Home Depot for 150$ back then.
