  • Mid-Week Pot Roast

    Ever have that crave'in for pot roast? For me the issue was 101°F on the back porch and I really didn't want to run the oven in the house for 2.5 hrs. So I went to Lowes and bought the Weber 7441 charcoal grate and placed it over one of the pans I use for my dutch oven...fit like it was made for it. I dump about a half of a chimney starter full of lump charcoal and browned up the roast in a Lodge 13.25 cast iron skillet, removed the roast and sauteed the aromatics then placed the roast, covered it with the CI lid and ran the wood fired smoker up to 275°F for 2.5hrs. Really like the charcoal grate on the pan, for $11.00 I have a very portable 16in grill/stove.

      Thanks...that's why I did it outside...couldn't do it in the house to freak'in hot here in Orlando!

        Loooove me some pot roast... and that's a great one there. Well..cept... where's the roasted taters? GOTTA have roasted taters!

          This time I foil wrapped them and placed then along side the Cast Iron...sometimes I'll roast them or place half of them in the skillet and add them to the boiled for a beefy mashed, just depends on how much time I have. Been editing my last trip and am up against a deadline so I don't have a lot of time to spend...

            I knowed it's hot! Been doin alot of cookin outside....That there pot roast is up on it!

                Any excuse to smoke or grill or do any outside cooking is good enough for me!

                  I do mine in the crockpot, for a looooooong time, and it doesn't heat up the house much. Last time it was 90+ outside, somewhere around 85 inside, cause the AC was broken, and I did my roast in the crockpot for close to 18 hours. SO good, and didn't heat the house up much at all.

                  I put it in the crockpot around 8pm on low, in the morning when I get up to go to work, turn it down to warm, and when I get home it's time to eat!

                    Thanks, I don't mind using the crock pot, I just kinda like fire and black iron. :-)
