  • Memorial Day Ribs

    Somehow, I found some time in between all this moving/packing/unpacking to whip up 6 racks of spare ribs. I did them over lump and hickory, using a modified 3-2-1 method, squirting them every hour or so with a mix of Jim Beam and apple juice.

    Here they are at 2 hours:

                    Now those ribs were so beautiful, then I got to the girls, forget the ribs pop-pop, those two are cutie patooties beyond words! I hope you all moved much closer to them! You can tell they like you a little bit huh? LOL!!

                      Those two kids are a riot. They both refer to anything meat as chicken. "Pop-Pop, I want some more of your chicken on da' bone!" Gotta love it!
