    Well thanks to Abelman's thread and Dillons' sale (3.99/#) I gave the ol flat iron a try tonite...

    Well...it aint a ribeye thats for sure...

    I didnt marinade it as Abe advised but in my opinion, a good steak dont need no marinade. All I did was black pepper and my own roast rub. Five min/side over a hot charcoal fire and thats all. Ok, I did add a slab of butter while it was resting. Results were ... Not as tender as I was expecting... very tasty and well worth 4$ a pound. Normal price 6$/#.... I dont think so...

      This cut marinates well. Also if you have the butcher give you a top blade roast, you can fillet the steaks off of the intersecting tendon in the roast and have your flat iron steaks for a lot cheaper. I have never seen a top blade roast over 4$ a lb.
